Il Lido is on the hunt for a head sommelier to take custody of our highly regarded and awarded wine list.
Once a 1930's art-deco seaside cabaret hall on Cottesloe beach, today Il Lido is a highly regarded Italian canteen and wine bar, as well as a busy espresso bar. Our rustic Italian cuisine from all corners of Italy implores guests to explore the wine list which is diverse in its varietal and regional offering, with Barolos from every commune, Barbarescos, Chiantis and Tuscan superstars sitting comfortably alongside lesser known, small batch producers. Recognised at national awards for our sparkling, Italian and aperitif lists there is far more than one string to our bow. Il Lido's list also pays diligence to Australia and Western Australia's wine offering exploring the breadth of blue-chip producers alongside those of the avant garde. And then, an extensive list of rare and exciting amaro, grappa and dessert wines round out the Il Lido drinking experience.
The successful candidate will work very closely with our leadership team and supporting floor staff. You'll be an eager participant of the wait team and you'll be excited to maintain the highest level of personal wine, grower and supplier knowledge. You'll also remain up to date on beverage products, restaurant influences, and wine regions and vintages. Importantly, you'll have a serious passion for sharing this knowledge and mentoring the wider team on wine service ensuring we provide an all-round memorable experience to every guest.
A high degree of autonomy with regard to wine selections / purchasing negotiations is offered, allowing you to truly grow and develop the wine program. Of course, first-class organisational and time management skills are a must, and you'll be a well-presented and confident communicator with great attention to detail. Naturally, proficiency in stock control and inventory management is essential.
