Wildflower Kitchen is located inside Mercure Sunshine Coast Kawana Waters.
We are a 4.5-star full-service hotel, open 24/7 located next to Sunshine Coast University Hospitals. The restaurant is open 7 days for Breakfast and Dinner. Our kitchen team provides a consistent and high quality standard of food to our guests. The key responsibilities will include:
Establish and maintain effective and efficient recruitment, induction and training procedures in liaison with the Head Chef
Strong focus on maintaining and training staff in WH&S and hygiene standards within Kitchen
Co-ordinate high levels of service within Kitchen on a daily basis whilst maintaining quality control,
consistency and minimising cost as appropriate
Lead in the development, and service of a variety of functions
Correct preparation of produce as per menu costing
Maintaining a high standard of cookery techniques
Formulate and carry through standard practices / techniques in cooking methods
Work within set budgets in relation to wage cost and cost of goods
Strong and effective communication methods with Head Chef and management
Organisation & supervision of kitchen staff
Stock ordering when required ensuring this is in line with approved suppliers and within set par levels
Ensuring consistent stock ordering and receiving practices in regard to quality, weight, timeliness and price are met
Maintain sound book-keeping practices in relation to invoicing, department communication and ordering when required
Ensure stock receiving practices are executed and maintained
Regular weekly reporting to the Head Chef detailing progress, week in review, new ideas, staff development progress
Implementation and maintenance of set procedures to create consistent practices in conjunction with the Head Chef
The ideal candidate will have:
* A can-do, responsible, and flexible approach to work;
* A strong work ethic and a passion for preparing high quality food;
* The ability to maintain high workloads, and meet deadlines within specific time frames;
* Excellent communication skills;
* A friendly customer service demeanour;
* Prior experience desired in staging outstanding food services in a restaurant or hotel setting;
* An ability to thrive under pressure and work as a team in a high paced environment;
* A great sense of style and immaculate presentation and grooming;
* Attainment of the necessary Food Handler's certificate; and
* Initiative, commitment and passion for your job;
* The ability to work under pressure and work on your feet for long periods;
* A strong appreciation and compliance of workplace safety.
This is a casual role, working a spread of shifts over a 7 day roster; including week days, weekends, nights and public holidays.
