The Role We’re seeking a full-time Junior Sous Chef to support our back-of-house leadership team. Reporting to the Executive Chef, this role plays a key part in kitchen operations, financial performance, and team development while ensuring food is delivered to the highest standards.
Key Responsibilities
Hands-on role in day-to-day kitchen operations and service.
Assist with menu development that balances creativity, brand direction, and financial targets.
Maintain food quality, consistency, and timely service during high-volume periods.
Support cost control and reporting: COGS, labour, and BOH expenses.
Train, mentor, and lead CDPs, cooks, apprentices, and KPs.
Ensure hygiene, safety, and compliance are upheld at all times.
Manage stock levels, ordering, and wastage control.
Uphold a collaborative, positive, and motivated kitchen culture.
What We’re Looking For
Certificate-qualified Chef with minimum 3+ years’ experience in a comparable role.
Solid leadership and communication skills – able to motivate and train a team.
Calm under pressure, solutions-focused, and highly organised.
Professional presentation and attention to detail.
Passion for Japanese food and culture a strong advantage.
