Nasone Pizzeria & Bar is a family-owned Italian restaurant located in Golden Beach on the Sunshine Coast. We specialise in authentic Roman-style pizzas, fresh pasta dishes, and traditional Italian cuisine, using high-quality local produce and premium imported ingredients.
We are currently seeking a qualified and experienced Pizza Chef to join our team.
Position Details:
* Full-time position available
* Annual salary: $75,000 – $85,000 (depending on experience)
* Immediate start
* Golden Beach, QLD
Key Duties & Responsibilities:
Menu Planning & Food Costing
* Plan and contribute to seasonal menu development, including pizza selections, pasta dishes, and specials.
* Design event or function-specific menus where required.
* Estimate food and labour costs.
* Monitor portion control and minimise food wastage.
Ordering & Stock Control
* Order kitchen and food supplies including:
o Flour (00 flour), yeast and dough ingredients
o Italian cheeses (mozzarella, pecorino romano)
o Smallgoods (Italian sausage, finocchiona salami)
o Fresh vegetables and herbs
o Meats and seafood
* Monitor stock levels and rotate stock according to FIFO principles.
* Freeze and preserve food items where appropriate.
Food Preparation
* Prepare ingredients including:
o Pizza dough (mixing, proofing, portioning and stretching)
o Fresh sauces (e.g., tomato sugo)
o Vegetable preparation
o Meat preparation and portioning
o Pasta preparation where required
* Ensure mise en place is completed prior to service.
Cooking & Service
* Stretch, top and cook pizzas using commercial pizza ovens.
* Prepare and cook pasta and other menu items using appropriate cooking methods including baking, roasting, sautéing and boiling.
* Ensure quality of dishes at all stages of preparation, cooking and presentation.
* Maintain consistency in flavour, texture and appearance.
* Work efficiently during fast-paced lunch and dinner service.
Quality, Safety & Hygiene
* Ensure compliance with food safety standards and hygiene regulations.
* Maintain a clean and organised kitchen.
* Monitor temperature control, storage and handling of food.
* Ensure safety and hygiene conditions of prepared and cooked food at all times.
Team & Communication
* Discuss food preparation issues with managers, kitchen staff and wait staff.
* Supervise kitchen operations during service when required.
* Assist in selecting, training and mentoring junior kitchen staff.
Essential Requirements:
* Minimum 2 years' relevant experience as a Chef or Pizza Chef.
* Experience preparing and cooking pizzas in a commercial kitchen.
* Strong understanding of food safety and hygiene standards.
* Ability to work in a fast-paced environment.
* Strong teamwork and communication skills.
Passion for authentic Italian cuisine and attention to detail are highly regarded.
