Chef de Partie – Hotel Indigo Melbourne & Holiday Inn Melbourne
We're launching IHG's first dual-branded Australian hotel project, spanning 452 rooms across Hotel Indigo Melbourne (Little Collins Street) and Holiday Inn Melbourne (Bourke Street Mall).
Both venues feature centrally located kitchens that support "The Fern Bar & Dining" and "The Greenery" dining experiences.
A little taste of your day-to-day
Support the Executive Sous Chef in directing daily kitchen activities and preparing delicious food.
Organise and set up the station, ensuring all ingredients and equipment are readily available.
Prepare and cook a variety of a-la-carte dishes according to established recipes and guest preferences.
Pay close attention to presentation, garnishing dishes with precision and creativity to enhance visual appeal.
Maintain a hygienic kitchen area, following HACCP regulations.
Support quality, kitchen maintenance and inventory functions to keep the kitchen running smoothly.
Promote teamwork and quality service through daily communication and coordination with other departments; communicate with all hotel department heads to stay informed of kitchen needs and ensure timely responses to requests.
Assisting the Executive Sous Chef and Executive Chef in creating menu items, recipes and developing dishes.
What We Need From You
Certificate III in Commercial Cookery or equivalent.
Minimum 3 years' experience as a chef and at least 1 year in a supervisory capacity.
Food Safety Certification.
Demonstrated mastery in a wide range of cooking techniques, food preparation methods and kitchen equipment use.
Flexibility – night, weekend and public holiday shifts are all part of the job.
Articulate – a great communicator, warm, welcoming and easy to talk to.
Problem-solving skills to turn issues into opportunities so every guest leaves with great memories.
