About the Role
Head Sommelier: Lead our fantastic wine and beverage program, along with leading our team of Sommeliers and bartenders. This role is supported by our exceptional Group Wine Director, Amanda Yallop - Good Food Guide's 2025 Sommelier of the year, and highly accomplished General Manager, Matthew Sharrock. As Head Sommelier, you will curate and oversee a wine list that showcases the richness and diversity of Italy's vineyards—alongside iconic global producers—while ensuring perfect harmony with our Italian dishes. You will be the restaurant's wine ambassador, guiding guests through pairings inspired by Italy's traditions, terroirs, and contemporary trends.
Responsibilities
* Curate and continually evolve a wine list with a strong Italian identity, highlighting both classic and emerging regions.
* In collaboration with our bar team, guide our beverage offering with seasonal changes.
* Manage all wine purchasing, supplier relationships, and cellar operations.
* Deliver exceptional table-side wine service, with a focus on storytelling, regional knowledge, and personalised pairings.
* Train and mentor the sommelier team and front-of-house staff, fostering a culture of passion and expertise.
* Lead wine tastings, pairing dinners, and guest experiences reflecting Italian food and wine heritage.
* Monitor wine sales, margins, and stock accuracy to support business performance.
* Maintain impeccable cellar organisation and proper storage conditions.
Qualifications
* WSET Level 3, Diploma, or CMS certification preferred.
* Proven experience as a Head Sommelier or Senior Sommelier within fine dining.
* Deep knowledge of Italian wine regions, varietals, and producers, with enthusiasm for sharing that knowledge.
* Strong leadership and communication skills, with a guest-first mindset.
* Ability to create memorable, sensory-driven experiences through wine.
* Strong organisational and financial awareness.
Required Skills
* Proven experience as a Head Sommelier or Senior Sommelier within fine dining.
* Deep knowledge of Italian wine regions, varietals, and producers, with enthusiasm for sharing that knowledge.
* Strong leadership and communication skills, with a guest-first mindset.
