Peppers Silo Hotel is an inspiring $30 million redevelopment of the Kings Wharf grain silos in Launceston, Tasmania. The nine-storey hotel consists of 108 rooms, including 52 in the barrels of the former silos, and overlooks the nearby tourist drawcards of Seaport, Royal Park, the Tamar River Basin and Cataract Gorge. On our ground floor you will find Silo Day Spa, and Level 1 you will find Grain of the Silos offering dining experiences across the restaurant, café and Woody's Bar where local produce is at the heart of all creations. Launceston, the largest city in northern Tasmania is a gastronomic hub and offers a diverse range of wineries, distilleries, markets and art galleries to explore during your down time.

Purpose

As Head Chef, you are the driving force behind the culinary excellence at Grain of the Silos, especially during our vibrant Dinner Service. Your guidance and expertise are instrumental in nurturing your kitchen team's talents as they craft delectable dishes that linger in the memories of diners. Working alongside the Executive Chef you will mentor your staff, overseeing food preparation, and thoughtfully curating enticing menus, all while maintaining a smoothly functioning and secure kitchen operation to guarantee an enjoyable experience for every guest.

Primary Responsibilities

* Developing and updating menus, including selecting ingredients, creating recipes, and ensuring variety and quality
* Overseeing the daily operations of the kitchen, including staff scheduling, inventory management, and kitchen hygiene
* Supervising the cooking process, ensuring that dishes are prepared to the highest standards in terms of taste, presentation, and portion size
* Managing the kitchen's budget, controlling food costs, and minimising waste to maximise profitability
* Hiring, training, and supervising kitchen staff, including chefs, cooks, and kitchen assistants, to ensure a smooth operation
* Collaborating with restaurant management, front-of-house staff, and suppliers to coordinate the overall dining experience and address any issues

Skills & Experience

* Previous experience as a Head or Senior Sous Chef with leadership abilities and track record of effectively managing kitchen teams
* Proven menu development skills, crafting innovative dishes with seasonal ingredients, accommodating dietary needs, and maintaining top-notch presentation
* Take great pride and passion in the food you produce with exceptional attention to detail
* Strong organisational abilities for preparation, planning, and cost control
* A natural team player that loves the synergy of a great team, but can also work autonomously with ease
* Personal presentation & communication skills are imperative, along with positive energy & attitude
* The ability to adapt to a diverse work schedule is crucial. Evening availability is essential, with the flexibility to work mornings, evenings, weekends, and public holidays as needed.
