Our esteemed client, PDA Holdings Pty Ltd, is seeking dedicated and experienced Cooks and Chefs to join their vibrant culinary teams across two of their premier hospitality venues – the iconic Shoal Bay Country Club and ATMOS.
Both venues are renowned destinations in beautiful Shoal Bay, offering a premium coastal dining experience, vibrant atmosphere, and world-class live entertainment – all set against the stunning backdrop of Shoal Bay Beach.
These are full-time positions offering a competitive salary package ranging from AUD 70,000 to 80,000 per annum, plus superannuation. Higher remuneration may be offered to candidates with exceptional experience and skills.
Role Overview
As a key member of the kitchen brigade, your responsibilities will include:
* Overseeing day-to-day kitchen operations, including staff delegation, stock rotation, and record keeping
* Preparing and cooking high-quality dishes for regular service and special events
* Managing kitchen production schedules and ensuring timely, efficient service
* Estimating food supply needs, managing orders, and controlling ingredient costs
* Ensuring all food preparation areas, equipment, and supplies meet quality and hygiene standards
* Developing and pricing menu items in line with food, labour, and overhead costs
* Assisting with seasonal menu planning and recipe development
* Demonstrating cooking techniques and mentoring team members
* Ensuring all workstations are clean, organised, and ready at the start of each shift
* Maintaining full compliance with food safety standards, WHS, and HACCP regulations
* Assisting with onboarding, training, and supervising junior staff to build a high-performing team
What We're Looking For
To be considered for these roles, candidates should ideally have:
* Certificate III and/or IV in Commercial Cookery (preferably Australian qualifications)
* Minimum of 2 years' experience in a similar role within a busy, high-quality kitchen
* Strong knowledge of WHS and HACCP food safety practices
* A positive team attitude and the ability to work under pressure
* Excellent communication and interpersonal skills
