Role and Responsibilities
As the Chef de Partie, you will take responsibility for overseeing specific sections of the kitchen, ensuring the preparation, cooking and presentation of food meet the highest standards of quality and consistency. You will work closely with the Sous Chef & Executive Chef to deliver exceptional culinary experiences for our guests.
You will be responsible for managing the daily operations of the kitchen and kitchen team, ensuring exceptional cuisine is delivered at all times. You will manage relevant costs within the established budget, and you will assist with implementing processes to guarantee the highest quality, creativity and customer satisfaction.
Key Responsibilities
* Lead the pastry and bakery section within a refined, quality focused kitchen
* Produce refined desserts, pastries, breads and petit fours to premium standards
* Execute advanced pastry and bakery techniques with precision and consistency
* Maintain exceptional presentation aligned with brand and guest expectations
* Collaborate with Executive and Sous Chef on menu development and innovation
* Oversee quality control, portioning and service timing
* Ensure strict compliance with HACCP, food safety and WHS standards
* Manage stock control, ordering, waste minimisation and costawareness
Skills & Experience
* Proven experience as a Pastry Chef de Partie in a refined hotel or top end quality restaurant
* Strong background in modern pastry, plated desserts and artisan bakery
* Exceptional attention to detail and commitment to consistency
* Ability to perform under pressure in a premium service environment
* Strong organisation and communication skills
* Certificate III in Patisserie or Commercial Cookery (essential)
* Sound knowledge of HACCP and professional kitchen standards
