Bar Manager
We are looking for a highly skilled and experienced Bar Manager to lead our team. This is a dynamic role that requires strong leadership, exceptional customer service skills, and a deep understanding of liquor licensing laws.
Key Responsibilities:
* Operational Management: Oversee daily bar operations, maintain high standards of cleanliness, hygiene, and service, coordinate with kitchen and floor teams, and implement standard operating procedures (SOPs) for efficiency and consistency.
* Staff Leadership & Training: Recruit, roster, and supervise bartenders, barbacks, and bar supervisors, conduct RSA refresher training, coach and mentor team members, and foster a positive, energetic, and inclusive team environment.
* Stock & Inventory Management: Manage beverage inventory, conduct weekly stocktakes, build strong relationships with suppliers, control wastage, and ensure cost-effective pouring and serving practices.
* Compliance & Licensing: Ensure full compliance with liquor licensing laws, maintain accurate incident registers, training records, and compliance documentation, liaise with authorities during inspections or licensing matters, and monitor patron behaviour.
* Menu Development & Promotions: Work with senior bartenders to design seasonal cocktail menus, introduce innovative drinks to attract customers, plan and execute bar promotions, happy hours, and special events, and collaborate with marketing team on social media promotions and local outreach.
* Financial Accountability: Monitor daily, weekly, and monthly bar sales and profitability, manage bar budgets, cost of goods (COGS), and wage-to-sales ratios, identify sales trends, and adjust strategies to maximise revenue.
* Health, Safety & Incident Management: Ensure compliance with WHS regulations and venue safety policies, handle patron incidents professionally, maintain safe and secure work and customer environments.
Essential Requirements:
* Current NSW RSA Competency Card
* Minimum 3 years' experience in bar management or senior bar role
* Strong knowledge of liquor licensing laws
* Proven ability to manage high-volume venues
* Excellent leadership, communication, and organisational skills
* Ability to work flexible hours, including nights, weekends, and public holidays
