The Rocks Mornington on the Mornington Peninsula, say no more.

Established in 2001 our venue is well into its twentieth year of success. Seating up to 130 people in its restaurant and waterfront deck and attached to the Mornington Yacht Club with a function room for up to 90 we are seeking to start the next chapter with an experienced Head Chef to drive the existing kitchen team of 9, plus stewards.

We only source premium products and deal with Australia's leading meat & seafood suppliers. Anything less would not do this iconic venue justice.

The Senior Sous/ Head Chef is responsible for ensuring that the standard and quality of food along with the hygiene within the department is maintained at the highest levels. The role is very much hands on, requiring attention to detail, excellent communication skills, a positive work attitude and be receptive to the business direction & menu design.

6 Digit Salary package achievable for the right person. Scope to grow professionally and financially.

Responsible to: Executive Chef

Roster: 38 – 45 hour week on average, 5 day working week including weekends and nights. Annualized salary arrangement.

Experience & passion is a MUST along with some of the following:

- Assisting the executive chef in menu planning and culinary direction
- Overseeing a well-established kitchen team of 6 CDP’s & 2 apprentice & cooks PLUS stewards
- Create, maintain and manage systems to allow efficiencies along with a high level of cleanliness
- Be in the know with current Melbourne food scenes and trends
- Have led a team prior and achieved success
- Be a Qualified Chef, seafood experience a preference
- Punctual, organised, trustworthy
- Skilled appearance
- Ability to motivate
- Ability to maintain stress
- Ability to resolve conflict
- Willingness to listen, learn and take initiative
- Ability to delegate tasks
- Maintain a positive team morale
- Lead by example
- Be approachable to sub-ordinates
