Mt Mulligan Lodge, part of the Morris Escapes collection, is seeking an experienced and inspiring, Executive Chef to lead our culinary offering at our exclusive outback luxury lodge. This is a hands-on leadership role for a chef who loves creating memorable dining experiences, enjoys the rhythm of remote living, and takes pride in looking after both guests and staff.
This position is for the start of our season in March, with the role commencing in late February.
About the Role
As Executive Chef, you will own the end-to-end culinary experience at Mt Mulligan Lodge, including:
* Designing and delivering refined, contemporary, daily changing menus for our guests that reflect our outback location and premium positioning.
* Leading daily kitchen operations across breakfast, lunch, dinner, special events, and bespoke experiences.
* Planning, preparing, and delivering nutritious, varied, staff dinners that support the wellbeing and morale of our on-site team.
* Maintaining consistently high standards of food quality, presentation, and portion control.
* Overseeing all food safety, hygiene, and compliance requirements.
Key Responsibilities
Culinary & Operations
* Develop seasonal menus that hero local, regional, and Australian produce.
* Manage ordering, stock control, and supplier relationships to achieve budgeted food costs and minimise waste.
* Maintain an organised, efficient, and safe kitchen environment.
* Coordinate catering for special functions, group events, and VIP experiences.
Staff Management & Leadership
* Lead, mentor, and roster a small kitchen team, leading by examle.
* Build a positive, respectful, and professional kitchen culture that aligns with Mt Mulligan Lodge and Morris Escapes values.
* Manage performance and development, providing regular coaching and feedback.
* Work collaboratively with the Lodge Manager, Front Office, and Food & Beverage teams to deliver a seamless guest experience.
