About the RoleAs Sous Chef with Rick Stein at Coogee Beach, you'll take the lead during service, oversee kitchen operations and craft exceptional signature dishes that truly leave a lasting impression.
Working closely with the Head Chef, you'll uphold our high standards in food quality, cleanliness, ordering, and team leadership to ensure smooth and productive kitchen operations.ResponsibilitiesDeliver exceptional dining experiences by ensuring consistent quality in food preparation, flavour, and presentation across all outlets and service stylesLead daily operations including food prep, cooking in service and platingWork with Head chef to ensure consistency in menus that reflect seasonal ingredients, current trends, and customer preferencesEnsure optimum ordering of food stock & accurate stock takeMonitor food costs and implement measures to control expensesSupervise daily kitchen activities, plan and assign work ensuring you always have the right staffing numbers and labour costs are managed effectivelyTrain and develop your team and improve their performance through coaching, feedback and recognitionWork with the Head Chef to recommend or initiate any HR related actions where needed in terms of recruitment or performance managementQualificationsFull working rights in Australia without restrictions(a kind reminder sponsorship is not available for this role)5 years' experience working as a chef in high-end specialty restaurants with at least 2-years supervisory experience in kitchen operations in a similar roleCertificate IV in Commercial Cookery is essentialA true love of good foodAbility to inspire passion, enthusiasm and positivity in the team to drive an engaged, winning cultureExcellent verbal and written communication skills and the ability to engage well with both the team and guestsUnderstanding and demonstrated adherence to Australian food standardsMandatory certifications include Food Safety Certificate and First AidExperience working in an open kitchen environment would be an advantageHolds a current food safety certificationBenefits and CultureWe give our people everything they need to succeed.
