HEAD CHEF – Manta Ray Restaurant

Hamilton Island is seeking a passionate and experienced Head Chef to lead the kitchen at Manta Ray Restaurant, our vibrant marina-front venue serving a relaxed coastal Mediterranean menu designed for sharing. With stunning views over the Hamilton Island Marina, a fun and laid-back bar area, and a family-friendly atmosphere, Manta Ray is a favourite for guests enjoying long lunches, sunset dinners, and late-night dining.

Your Role

As Head Chef, you'll oversee all kitchen operations at Manta Ray, delivering a share-style Mediterranean menu featuring seafood, meat, and vegetarian dishes. You'll drive creativity, manage a high-performing team, and ensure consistency across lunch, dinner, and late-night service.

Where you'll make an impact

* Design and deliver coastal Mediterranean menus for sharing
* Lead a busy kitchen servicing lunch, dinner, and late trade
* Maintain exceptional quality, consistency, and presentation
* Train, mentor, and develop your kitchen brigade
* Manage stock control, food cost, ordering, and compliance
* Collaborate with bar and FOH teams for seamless guest experiences
* Uphold food safety, WHS, and operational standards
* Drive innovation while maintaining Manta Ray's relaxed vibe

What we're looking for

You are a creative and confident culinary leader who thrives in vibrant, fast-paced environments. You bring strong Mediterranean and seafood experience, understand share-style dining, and are passionate about creating memorable guest experiences in a relaxed yet premium setting.

To be successful, you will need:

* Certificate III in Commercial Cookery (Essential)
* Current Food Safety Supervisor Certificate (Essential)
* Minimum 3–5 years' experience as a Head Chef or Senior Sous Chef
* Proven experience in high-volume restaurant operations
* Strong leadership and team management skills
* Experience with Mediterranean or coastal cuisine (Highly regarded)
* Excellent organisational, financial, and communication skills
* Flexibility to work evenings, weekends, and late-night service
