Ross Hill Wines is seeking a motivated and technically capable Assistant Winemaker to join our winemaking team in Orange, New South Wales.
Working closely with the Head Winemaker, this role will be involved in t he planning, coordination and execution of winemaking operations across the full production cycle. The successful candidate will undertake skilled winemaking duties and contribute to the quality, consistency and development of our wine production.

Key responsibilities:
* Participate in and manage key stages of the winemaking process, including fruit intake, crushing, fermentation, maturation, stabilisation and finishing
* Monitor ferments and wine development and assist with decision-making in relation to wine production outcomes
* Conduct and interpret laboratory analysis to support quality control and production processes
* Maintain accurate production, laboratory and compliance records
* contribute to blending trials, wine evaluation and bottling preparation
* Plan and coordinate daily cellar and winery operations to meet production requirements
* Supervise and support seasonal vintage staff during harvest and production periods
* Ensure winery operations are carried out in accordance with workplace health and safety requirements and sustainability standards

Job responsibilities:

* Degree or diploma in Oenology, Viticulture or a related field, or equivalent relevant industry experience
* At least 2 years of relevant experience in winemaking, cellar operations or a closely related role
* Demonstrated technical knowledge of winery production processes and wine quality control
* Ability to work with a level of autonomy and sound judgement in a production environment
* Strong organisational and communication skills
* Forklift licence and current driver's licence preferred
* Capacity to work extended hours during vintage and other period production periods
