The Yarra Valley Grand Hotel is entering an exciting new chapter, with an upcoming redevelopment set to elevate this iconic, tourism-driven venue. With a diverse crowd, strong peak trade and high-volume service across key sessions, we're looking for an experienced Head Chef who can lead from the front and lift the standards while maintaining pace.
This is a hands-on leadership role, for someone who thrives in a busy environments and knows how to execute consistently under pressure.
About the Role
As Head Chef, you'll take full ownership of kitchen operations, leading a team through high-volume service while driving improvements in food quality, consistency, and speed. You'll play a key role in preparing the kitchen for the upcoming renovation, balancing creativity with strong operational discipline.
What You'll Be Responsible For
* Leading high-volume service across peak tourism and trading periods
* Maintaining food quality, consistency and execution speed
* Driving kitchen standards, systems, and team accountability
* Menu development with a practical, commercial lens
* Stock control, labour management and food cost management
* Training, mentoring and energising your kitchen team
* Preparing the kitchen operation for upcoming redevelopment changes
What We're Looking For
* Minimum 5 years' experience as a Head Chef in a high-volume environment
* Proven ability to execute quality food at pace during busy services
* A natural pace-setter who leads from the front
* Strong operational and organisational skills
* Experience working in tourism-driven or diverse venues highly regarded
* A creative yet commercially minded approach to menu and service delivery
