Bomboras restaurant, nestled in the heart of Torquay with stunning ocean views, is seeking a highly skilled and passionate Senior Sous Chef. Our restaurant offers a bright, breezy brunch spot by day and a cozy dining experience by night, serving breakfast, lunch, and dinner. We focus on the finest Australian produce and highlight the flavours of our coastal region with a modern Australian menu. With a seating capacity of up to 150 people, we are a bustling, fast-paced establishment, especially during the summer season. We seek a Senior Sous Chef who can co-manage our kitchen autonomously, create and innovate menu items, train and inspire our staff, and cater to large functions and events. Key Responsibilities:
* Kitchen Management: Oversee kitchen operations, ensuring smooth and efficient workflow. Co-manage kitchen staff schedules, inventory, and supplies.
* Menu Development: Design and create new and innovative menu items that reflect current food trends and meet customer preferences. Ensure menus are updated seasonally and incorporate fresh, local ingredients.
* Event Catering: Plan and execute catering for large functions and events, ensuring high-quality service and food presentation. Customize menus to meet the specific needs of each event.
* Staff Training: Train, mentor, and develop kitchen staff, ensuring high standards of food preparation and presentation. Foster a collaborative and positive working environment.
* Quality Control: Maintain the highest standards of food quality, taste, and presentation. Implement and monitor food safety and sanitation practices.
* Cost Management: Co-manage food costs and kitchen staffing budget. Ensure cost-effective purchasing and minimize waste.
* Customer Experience: Collaborate with front-of-house staff to ensure an exceptional dining experience for our guests. Handle customer feedback and complaints professionally.
Qualifications:
* Proven experience as a Senior Chef or Head Chef in a high-volume, fast-paced environment.
* Culinary degree or equivalent professional experience.
* Strong leadership and management skills.
* Creative and innovative approach to menu development.
* Experience in planning and executing catering for large functions and events.
* Excellent communication and organizational skills.
* In-depth knowledge of food safety regulations and best practices.
* Ability to work under pressure and handle multiple tasks simultaneously.
