RESPONSIBLE TO:

POSITION SUMMARY:
To operate and maintain the Hotel's kitchens and food offerings in accordance with established operating procedures.
RESPONSIBILITIES:
1. Maintain all food safety documentation and digital food safety programs to EVT standards.
2. Inspect and ensure that all kitchen equipment is in working order.
3. Ensure that all kitchens are cleaned and maintained to a high standard, following QT Melbourne's cleaning rosters and guidelines.
4. Keep rosters, timesheets, and payroll records up to date in line with EVT schedules.
5. Manage all kitchen staff's annual leave to ensure they take their leave regularly.
6. Motivate kitchen staff to foster a harmonious workplace.
7. Ensure all rostering and staffing requirements are met within budgetary guidelines of QT Melbourne kitchens.
8. Assist the Executive Chef in creating menus aligned with QT Melbourne's food narrative and program.
9. Develop and standardize recipes and menus to ensure high-quality food standards.
10. Cost all dishes, recipes, and menus for all hotel food outlets.
11. Ensure that all food across kitchens is served to the highest standard.
12. Maintain appropriate food stock levels, adhering to Food COGs budgets.
13. Maintain and grow relationships with food suppliers and producers, ensuring the best pricing for QT Melbourne.
14. Collaborate with outlet managers and F+B management to ensure smooth and efficient service both front and back of house.
15. Address customer needs and requests to the best of the kitchen's ability.
