Job Description
About the Employer: We have a client who is looking for a butcher, known for delivering fresh and high quality meat with exceptional customer service. The business is now seeking an experienced Butcher to assist with the store operations. NOTE: The client is happy to sponsor a client who matches the job description.
Responsibilities
Meat Preparation & Cutting
Select, cut, trim, and prepare meat to meet specific customer and business requirements.
Bone, slice, and portion meat accurately to maintain yield and minimize wastage.
Ensure proper handling and storage of meat products in accordance with hygiene and food safety standards.
Small goods Production
Prepare, mix, cure, smoke, and cook smallgoods such as sausages, hams, bacon, and salamis.
Monitor temperature, humidity, and timing for curing and smoking processes to ensure consistent product quality.
Operate and maintain smallgoods-making machinery, including mincers, fillers, and slicers.
Quality Control & Presentation
Inspect meat and smallgoods for freshness, quality, and compliance with specifications.
Maintain visual appeal and accurate labelling of displays to meet company presentation standards.
Check packaging, weights, and expiry dates for compliance with food regulations.
Customer Service & Orders
Engage with customers to provide product recommendations, special cuts, and custom orders.
Ensure prompt and friendly service to maintain customer satisfaction and repeat business.
Assist in managing retail displays and promotional activities for meat and smallgoods.
Inventory & Workflow Management
Monitor stock levels and report shortages or discrepancies to supervisors.
Assist with ordering, receiving, and rotating stock to maintain freshness and minimise spoilage.
Contribute to production planning and workflow coordination to meet daily and seasonal demands.
Health, Safety & Compliance
Adhere to all OHS and food safety procedures, including proper PPE use and sanitisation protocols.
Ensure compliance with HACCP, company policies, and Australian food handling regulations.
Maintain a clean, organised, and hazard-free work environment at all times.
Job Requirements
Certificate III in Meat Processing (Butchery) or equivalent qualification.
Minimum of 2 years' experience as a butcher or smallgoods maker in a retail or production environment.
Skilled in meat cutting, trimming, boning, and smallgoods preparation (sausages, hams, bacon, cured meats).
Sound knowledge of food safety standards (HACCP), hygiene, and cold chain requirements.
Ability to read and follow product specifications and production schedules accurately.
Good physical fitness and ability to work in chilled environments.
Competent in using and maintaining butchery equipment safely (e.g. slicers, mincers, bandsaws).
Strong attention to detail, product quality, and workplace safety.
Effective communication and teamwork skills.
Australian citizenship, permanent residency, or unrestricted working rights.
Knowledge of food safety, hygiene, OH&S, and applicable compliance standards.
