We sell to retail customers through our online shop and our two retail stores, in Marrickville and Waverley. We also have high-end restaurant customers who we service from our Marrickville production facility, where we also produce ready-to-eat products from our on-site production kitchen.
The position
As the Co-Head Butcher, you will be joining and helping to lead a small, focused team practising artisan butchery including breaking whole bodies, portion cutting, making sausages from scratch (no preservatives or fillers), preparing retail displays and cured products.
Working alongside our Senior butcher, you will be jointly responsible for managing the day-to-day organisation of the production team, this will also include managing the carcass hanging room to ensure minimal wastage, along with being responsible for our cured meat program.
Key responsibilities
* Managing the day-to day organisation of the butchery and production team.
* Oversee carcass management, our dry ageing program, and stock rotation.
* Oversee our in-house cured, smoked, pickled and dehydrated product range.
* Provide training to our apprentice and junior butchers, along with training our packing staff.
* Overseeing daily food safety records and ensuring compliance to our A Grade Food Safety Program.
* Preparing wholesale orders for our high-end restaurant customers.
* Preparing retail online orders.
* Preparing attractive, fresh meat retail displays.
* Assisting in delivering outstanding retail customer experiences.
* Assisting with daily set up and cleaning.
What you'll need to bring:
* Proven leadership without ego - lead and nurture a small, but dynamic team that come from all walks of life.
* Strong written and verbal communication skills.
* Butchery qualification, with experience managing a butchery team.
* A love for whole animal butchery, along with good portion-cutting skills.
* Experience and knowledge of food safety standards and compliance.
* Punctual, reliable, and energetic.
Hours & conditions
Good hours for work-life balance. Must be available to work at both our Marrickville and Waverley locations and some occasional weekend work.
