Executive Chef → Group Executive Chef Opportunity
The Parade Hotel Bunbury is seeking an experienced Executive Chef to lead our kitchen as we transition from externally managed operations to full in-house control.
The Parade is a high-volume waterfront venue serving up to 300–500 meals per day during peak periods, with a strong functions and events offering.
The successful candidate will initially spend time working hands-on to understand the kitchen, service flow and current team before establishing their own systems, menus and kitchen structure.
This role offers full ownership of the kitchen, including the ability to recruit your own team, shape menus and lead all back-of-house operations while working closely with venue management.
As the business grows, this role has a clear pathway to evolve into a Group Executive Chef position overseeing multiple venues.
What you\'ll be doing
* Lead and manage all back-of-house kitchen operations
* Work closely with FOH venue managers to ensure smooth service
* Develop and manage a la carte and function menus
* Recruit, build and mentor your own kitchen team
* Manage food costs, stock control and ordering
* Build and manage supplier relationships and purchasing strategies
* Implement strong kitchen systems, procedures and service standards
* Ensure compliance with all food safety and hygiene regulations
What we\'re looking for
* 8+ years experience as a Head Chef, Executive Chef or Area Chef in a high-volume venue
* Proven experience creating menus for busy venues and functions
* Strong leadership skills with the ability to build and develop kitchen teams
* Experience managing food costs, suppliers and kitchen profitability
* Excellent organisation, communication and problem-solving skills
* A chef who enjoys both hands-on leadership and building strong kitchen systems
This role suits someone ready to step beyond a single-venue Head Chef position and quickly grow into a broader Executive Chef role across multiple venues.
