What you’ll do:
Freycinet Lodge is renowned for its celebration of local produce and fresh seafood. As Head Chef, you’ll lead the culinary direction across our diverse dining venues, from the elevated experience of The Bay Restaurant to the relaxed, family-friendly Richardson’s Bistro. You’ll inspire your team to deliver exceptional food and service, while maintaining a resilient, solutions-focused approach. Your key responsibilities will include:
- Lead Kitchen Operations: Oversee all aspects of kitchen operations, ensuring smooth service delivery across all venues.
- Team Leadership & Development: Manage, mentor, and develop the kitchen brigade, fostering a culture of excellence, collaboration, and continuous improvement.
- Menu Innovation: Design seasonal menus and daily specials that showcase local ingredients and align with guest preferences and business goals.
- Quality & Presentation: Uphold the highest standards of food quality, consistency, and presentation in every dish served.
- Cost & Inventory Management: Control food costs, minimise waste, and manage inventory and supplier relationships effectively.
- Compliance & Safety: Ensure full compliance with food safety, hygiene, and workplace health and safety standards.
- Roster & Labour Management: Develop and manage team rosters in line with budget and Hospitality Industry General Award (HIGA) requirements.
What you’ll bring:
- Extensive hands-on experience in kitchen operations with a clear understanding of the logistics of restaurants and functions catering
- Formal qualifications in commercial cookery
- A passion for your trade and for creating and presenting contemporary dishes using local produce
- Demonstrated experience in innovative menu planning and design, and producing and presenting food in line with current trends with a concern for competing against a standard of excellence
- Experience in controlling daily food costs and setting and meeting budgets
- Demonstrated excellent customer service, interpersonal and communication skills
- Experience in leading, coaching and mentoring a team while fostering a positive and productive work environment
- Demonstrated computer literacy, particularly with common office applications
- Food Safety Supervisor Certificate
- Versatile attitude to work hours over a 7-day roster, including weekends and public holidays
