As part of the culinary leadership team, you'll help deliver extraordinary events — from high-profile conventions and exhibitions to elegant gala dinners for up to 1,400 guests. Working alongside a passionate Head Chef and talented kitchen brigade, you'll play a key role in delivering innovative, high-quality cuisine at scale.
Job Description
As Sous Chef, you'll support the Head Chef in leading kitchen operations, mentoring the team and delivering exceptional food across a diverse range of events. This role is perfect for a creative, hands-on leader who thrives in a fast-paced, high-energy environment.
Key Responsibilities
* Lead daily kitchen operations, ensuring high-quality food delivery for large-scale events.
* Mentor and develop junior chefs; assist with recruitment, rosteringand payroll.
* Create and innovate menus for banquets and high-profile events.
* Manage food costs, budgetsand inventory efficiently.
* Oversee the stewarding team to ensure smooth kitchen operations, cleanlinessand compliance with hygiene standards.
* Maintain a safe, professionaland positive kitchen culture.
* Drive consistency, creativityand excellence across all services.
Qualifications
* Minimum 2 years' senior/leadership experience with strong banqueting background.
* Hands-on leader who motivates teams, sets standardsand leads by example.
* Strong communicator, able to delegate and maintain high standards under pressure.
* Solutions-focused, adaptableand committed to improving food quality and service.
* Works independently with initiative, precisionand attention to detail.
* Flexible to work rotating roster including weekends, eveningsand public holidays.
* Must have full, unrestricted working rights in Australia.
