About The Role
In this role, you will be responsible for:
Leading and supervising employees across The Bistro, Patisserie, New Beijing, and Emporium Snack Bar, including kitchen and front-of-house staff
Hands-on cooking and day-to-day operation of our popular and successful Bistro
Reporting directly to the New Lambton Catering Manager through regular daily and weekly meetings to discuss operations, issues, and new ideas
Preparing and managing staff rosters, ensuring appropriate allocation of resources to meet business needs
Completing reports including file notes, injury reports, discrepancies, manager notes, appraisals, performance improvement plans, and other reports as required
Managing employee performance, including conducting performance reviews and addressing underperformance across kitchen and food court teams
Maintaining and promoting high standards of hygiene and cleanliness across all kitchens, and supporting team leaders with preparation and cleaning schedules
Monitoring food costs and managing weekly expenditure
Ordering stock in line with operational requirements
Driving innovation through the development of new ideas and concepts to enhance the catering profile of The Wests Group Australia
Leading by example by working efficiently and setting a positive, productive standard for all staff
About You
To be successful in this role, you will bring:
A minimum of two years' experience in a Head Chef role within a large club environment
Strong leadership capability with a proven track record of training, motivating, and developing kitchen teams
Creative flair, with excellent presentation, communication, and interpersonal skills
Demonstrated experience in menu planning, costing, and controlling wastage
Experience preparing rosters for large teams
Proven ability to manage performance and conduct performance discussions
Experience completing stocktakes and managing ordering processes
A collaborative leadership style that fosters cooperation and respect between team members
A friendly, enthusiastic, and positive can-do attitude
A strong commitment to maintaining and exceeding operational standards
A results-driven mindset with a focus on achieving outstanding sales outcomes
The ability to perform effectively in a fast-paced, high-pressure environment
Certificate IV in Commercial Cookery or relevant industry qualifications
