Casa De Amor is looking for an experienced Head Chef to lead our kitchen team and deliver bold, consistent Mexican food in a fast-paced restaurant and bar environment. If you're passionate about Mexican cuisine, team leadership, and running a tight, organised kitchen we'd love to hear from you.
Key Responsibilities
* Lead day-to-day kitchen operations and service as the Head Chef
* Maintain high standards of food quality, consistency, and presentation
* Create and develop seasonal menus, specials, and new Mexican-inspired dishes
* Manage ordering, stock control, portioning, and food cost targets
* Train, mentor, and roster kitchen staff to ensure smooth service and accountability
* Ensure compliance with food safety, hygiene, allergen, and workplace safety requirements
* Coordinate with front-of-house to deliver strong guest experiences
* Maintain kitchen systems: prep plans, cleaning routines, and service standards
What We're Looking For
* Proven experience as a Head Chef (or strong Sous Chef ready to step up)
* Strong knowledge and hands-on skill in Mexican (traditional + modern)
* Ability to run a busy service, manage prep, and lead a team confidently
* Excellent organisation, communication, and problem-solving skills
* Strong understanding of food cost control, wastage reduction, and ordering systems
* Commitment to cleanliness, structure, and consistency
* Valid work rights in Australia (preferred)
Role Details:
* Full-Time: 40 hours per week
* Working Hours: 5 days per week (includes nights/weekends as required)
* Salary: Competitive, based on experience
