About the Role:
Shadow Wine Bar is seeking a passionate and experienced Head Chef to lead our culinary team and continue delivering the sophisticated, European inspired dining experience we're known for. With a strong focus on Italian cuisine and Mediterranean flavours, this role is perfect for a creative and driven culinary leader who thrives in a premium hospitality setting.
As Head Chef, you will oversee the kitchen operations of Shadow Wine Bar and the Alex Hotel's continental breakfast offering. You'll lead a team of seven, uphold exceptional quality standards, and ensure financial and operational targets are consistently achieved.
* Full time position: Tuesday to Saturday (Sundays & Mondays off)
* Lead and manage a kitchen team of 7 chefs and kitchen porters
* Oversee all food operations for Shadow Wine Bar and Alex Hotel's continental breakfast
* Deliver refined Italian and Mediterranean cuisine with consistency and creativity
* Ensure smooth service during restaurant hours (12pm–late daily, closed Sundays)
Key Responsibilities:
* Produce high-quality dishes that meet and exceed guest expectations
* Lead, train, coach, and develop the kitchen team
* Manage ordering, stock rotation, inventory and recipe standards
* Create and manage rosters to meet operational needs and wage cost targets
* Maintain strict compliance with all WHS, OHS, and food safety regulations
* Control kitchen budgets, food costs, and KPI performance
* Collaborate effectively with FOH, hotel management, and other departments
* Maintain kitchen cleanliness, equipment care, and operational efficiency
* Drive menu development, innovation, and trend awareness
* Attend required meetings and training sessions
* Maintain a positive kitchen culture aligned with our values of empowerment, possibilities, and community
Skills & Experience:
* Minimum 2 years' experience as a Head Chef
* Strong background in Italian and European cuisine
* Proven ability to manage a team, maintain budgets, and achieve KPIs
* Demonstrated ability to meet wage cost targets and operate within strict financial guidelines
* Experience in rostering, ordering, stock management, and operational planning
* Comprehensive knowledge of WHS/OHS practices
* Ability to perform under pressure in a fast-paced kitchen

* Strong leadership and communication skills with a collaborative mindset
