Culinary Specialist Wanted!
The Role
* Inspect food to ensure quality and presentation, meeting our high standards.
* Cook a variety of dishes from our menu and on pans with guidance from the head chef.
* Prepare and cook complete meals or individual dishes and foods according to recipes and portion control.
* Portion food, place it on plates, and add gravies, sauces, and garnishes as per requirements.
* Regulate temperatures of ovens, grills, and other cooking equipment, ensuring they are in good working condition.
* Report maintenance needs to management promptly.
* Maintain inventory and records of food, supplies, and equipment, optimizing stock levels.
* Order raw materials from suppliers as per business needs.
* Review the menu with the head chef and contribute to seasonal changes.
* Follow and maintain all occupational health and safety (OH&SC) requirements for safe kitchen operations.
* Clean and maintain work areas and kitchen equipment.
* Set up and stock stations with necessary supplies.
* Assist with ordering supplies.
* Cook menu items in cooperation with other kitchen staff.
* Assist in developing the menu in consultation with the chef and restaurant manager.
* Advise and demonstrate proper portioning of ingredients and food, placing it on plates, dressing, and garnishes.
* Ensure all inventory is properly stored in temperature-controlled facilities.
Required Skills and Qualifications
* Relevant Certificate 3 or 4 qualifications in commercial cookery.
* At least 3 years of experience in a commercial kitchen, preferably with Italian cuisine expertise.
* Knowledge and experience in preparing various types of cuisine, including gluten-free, vegan, and nut-free options.
* Ability to work with different proteins, such as beef, pork, lamb, and seafood.
* Excellent time management and attention to detail skills.
* Knowledge of food safety and hygiene standards.
* Excellent communication and teamwork skills.
* Flexibility to work on weekends and adapt to changing kitchen demands.
