Type: Full-time (evenings/weekends required)
Role purpose
Work in an exceptional on-premise wine experience that maximises in-house and takeaway wine sales and grows the Brandy Creek Wine Club. You’ll be the face of wine for our guests—hosting tastings at tables and the bar, educating diners, curating pairings, and converting great conversations into in-house sales, takeaway wine sales and memberships.
Key responsibilities
Guest experience & tastings
- Proactively engage diners; run approachable, high-energy mini-tastings and table-side recommendations with a view to maximise the inhouse wine sale
- Host scheduled tastings/masterclasses (public & private), including event set-up, notes, and follow-up.
- Curate by-the-glass and pairing suggestions that elevate the menu and drive attach rate.
Sales & revenue
- Own wine sales outcomes (in-house consumption and takeaway).
- Convert tastings to takeaway wine purchases; manage POS add-ons (bottle-to-go, mixed packs, gift options).
- Maintain compelling tasting notes, shelf talkers, and “what to try tonight” features.
Wine Club growth & retention
- Own the Wine Club end-to-end: sign-ups, onboarding, quarterly packs, exclusive offers, and events.
- Represent the club floor-side—explain benefits, overcome objections, and close off the sale
- Periodically check in with wine club members with an e mail or a phone call
Conduct Wine Tours
- Sign up & Conduct insightful wine tours to the restaurant guests.
- Maximise the wine sale through use of appropriate sale techniques
- Build a funnel for future business of wine tours via promoting this aspect of the business.
Help the restaurant FOH staff when and if it gets busy, and attend to guest concerns.
Success measures (KPIs)
- In-house attach rate: % of tables purchasing estate wine.
- Bottle revenue per cover and takeaway conversion from tastings.
- Wine Club growth: net current sign-ups per week/month; churn < target.
- Event ROI: conversion from event attendees to purchases/club.
- Stock accuracy and compliance audit results.
Qualifications & experience
- WSET Level 3 (minimum); WSET Diploma highly regarded.
- Proven on-premise wine sales or sommelier experience; confident running tastings and closing sales.
- Strong storytelling and guest-education skills; able to translate wine styles into simple, memorable language.
- Solid cellar/stock management and POS proficiency.
- Current Victorian RSA and full Australian work rights.
- Able to lift and move cases (up to ~15 kg) and work peak service hours.
