PAVILION GEELONG IS LOOKING FOR A HEAD CHEF

Forge the Next Chapter of a Coastal Icon

We are seeking an accomplished and passionate hospitality leader to oversee kitchen operations at Pavilion Geelong and Caledonia Shores, and champion a landmark venue with an unmatched beachside presence and a reputation that precedes it.

As Head Chef, you'll guide a seasoned team at our lively cafe and our asian-fusion restaurant Caledonia Shores, plus private events, weddings, and large-scale functions that make memories. This is your opportunity to lead a kitchen with vision, drive culinary excellence, and leave your mark on one of Victoria's most recognisable venues.

About the Role:

The Head Chef who will take full ownership of kitchen operations, champion high culinary standards, and deliver exceptional dining experiences across all our outlets.

Key Responsibilities:

* Oversee and lead daily kitchen operations, including prep, service, and post-service procedures
* Manage kitchen workflow to ensure seamless service during high-volume periods, events, and functions
* Manage rostering, scheduling, and staffing levels to meet operational demands
* Understand and adhere to financial budgets, controlling food and labour costs effectively
* Manage stock control, ordering, and supplier relationships to optimise quality and cost-efficiency
* Demonstrate and enforce excellent food safety, hygiene, and quality standards consistently across all outlets
* Collaborate with management to design, refine, and execute seasonal menus that showcase local produce and coastal flavours
* Nurture a positive, collaborative kitchen culture that values respect, creativity, and accountability

We Are Looking For:

* Extensive experience as a qualified chef with proven success in senior kitchen leadership roles
* Strong, versatile cooking skills with meticulous attention to quality, flavour, and presentation
* Demonstrated ability to manage high-volume kitchen operations
* Proven track record in menu development, cost control, and team leadership
* Ability to work efficiently under pressure while maintaining composure and standards
* Excellent communication, leadership, and interpersonal skills
* A passion for hospitality, a love for great food, and a commitment to creating memorable dining experiences
