**Fresh Meats** is now looking to recruit a Butcher to join our dedicated and professional service team on a full time and permanent basis.
**Responsibility**:
Selects, cuts, trims, prepares and arranges meat for sale or supply, operates meat or smallgoods processing machines, or manages the processes in the production of smallgoods. Registration or licensing may be required.
**Duties**:
- Selecting, cutting, trimming, preparing and arranging meat for sale or supply, operating meat or smallgoods processing machines, or managing the processes in the production of smallgoods.
- Preparing meat for sale by removing bones, trimming fat and cutting, mincing and grinding meat to shape and size for display or as ordered
- Preparing crumbed cuts of meat, and marinating, seasoning and curing special cuts
- Selecting and preparing meat to produce smallgoods
- Operating machines to grind, mix, mince and tenderise meat
- Making seasonings and pickles by mixing spices, salt and other ingredients
- Operating sausage filling machines, smoking chambers, and cooking kettles and vats
- Advising customers on the suitability and uses of cuts of meat
- May assist in menu planning and scheduling, and in estimating food production costs
**Qualifications**:
- Relevant AQF Certificate III + 2 years on-the-job experience; or
- AQF Certificate IV; or
- At least 3 years of relevant experience.
**Skills and Attributes**:
- Must be proficient in food preparation, particularly when it comes to cutting, trimming, and grinding meats.
- Ability to use hand tools, butchery equipment, stand or walk for extending periods, lift heavy items, and work in cold environments.
- Must work well in a team environment.
- Knowledge of safety standards and sanitation
- Strong communication, task management, and customer service skills.
- Experience with various types of butchery equipment, cutting, grinding, preparing meats into specified shapes and sizes, crumbing, seasoning, marinating, smoking and curing meat.
