Sunshine Plaza, Maroochydore

We are on the hunt for an experienced Head Chef to lead the kitchen at Gilhooleys Sunshine Plaza.

The Venue

Gilhooleys was Brisbane's original Irish bar and restaurant and has proudly expanded to the Sunshine Coast. Our Sunshine Plaza venue is quickly becoming a much-loved fixture in Maroochydore, known for quality meals, live Irish music, and a warm, authentic pub atmosphere. We are a high-volume venue with a strong focus on consistency, quality, and guest experience.

The Role

As Head Chef, you will take full ownership of the kitchen operations, leading from the front in a fast-paced, high-volume environment. You will be responsible for maintaining food quality and consistency, managing kitchen staff, controlling costs, and ensuring smooth service across busy lunch and dinner periods.

This is a hands-on leadership role requiring strong organisational skills, the ability to make confident decisions autonomously, and a passion for developing your team. We are looking for someone who wants to make Gilhooleys their home and play a key role in the continued growth of the brand on the Sunshine Coast.

Key Responsibilities

* Lead, manage, and motivate the kitchen team in a high-volume environment
* Oversee all food preparation, service execution, and kitchen operations
* Maintain exceptional food quality, presentation, and consistency
* Manage food costs, labour, ordering, stock control, and wastage
* Develop, cost, and implement menus in line with the Gilhooleys brand
* Ensure compliance with food safety, WH&S, and relevant legislation
* Recruit, train, and develop kitchen staff to build a strong, cohesive team
* Work closely with venue management to support promotions and events
* Maintain a clean, organised, and efficient kitchen at all times

About You

* Proven experience as a Head Chef or Senior Sous Chef in a high-volume venue
* Strong leadership skills with the ability to manage and inspire a kitchen team
* Excellent understanding of food cost control, budgeting, and stock management
* Confident decision-maker who can work autonomously under pressure
* Comprehensive knowledge of food safety, compliance, and kitchen operations
* Passion for quality food, team development, and the hospitality industry
* Reliable, professional, and committed to long-term growth with the venue
