Head Chef (Senior Kitchen Captain) | Fonda Mexican – Canberra

We're looking for a Head Chef to lead our Canberra kitchen and drive performance, leadership, and consistency.
Key Responsibilities
* Lead from the front – build, mentor, and inspire a high-performing BOH team
* Training & development – coach team members and lift capability across all stations
* Stock & cost control – manage stocktakes, inventory, ordering, and COGS
* Rostering & labour – create efficient rosters and manage labour costs
* Operations excellence – ensure food quality, safety, hygiene, and service standards
* Performance driven – deliver on KPIs across sales, labour, and guest experience
* Oversee daily kitchen operations and collaborate on menu development
Qualifications
* Strong culinary experience in food preparation and delivering high-quality dishes
* Proven leadership and team management skillsExperience with stock management, rostering, and cost control
* Solid knowledge of food safety, hygiene, and kitchen operations
* Passion for fresh, high-quality food and Mexican cuisine
* Excellent time management and ability to perform under pressure
* Experience in restaurant kitchen operations preferred
* Formal culinary training or certifications are a plus
