We’re looking for a Head Baker to take the reins at our Collingwood bakery. If you know your way around wild fermentation, care deeply about great ingredients, and believe good bread takes time — we want to hear from you.
About the Role
As Head Baker, you’ll take the lead in shaping our daily bread offering — both literally and figuratively. You’ll oversee production, guide and mentor the baking team, manage operations, and ensure every loaf meets our high standards.
This is a hands-on leadership role where consistency, quality, and creativity go hand in hand.
Key responsibilities include:
* Leading the day-to-day operations of the bakery team
* Managing production quantities, minimising waste and ensuring adequate stock
* Training and mentoring junior staff and apprentices
* Planning bread menus and driving innovation while maintaining customer favourites
* Costing and margin management for all products
* Executing and coordinating wholesale orders
* Maintaining a clean, safe and compliant work environment
* Overseeing inventory, equipment maintenance and team scheduling
Who You Are
You’re an experienced baker with a strong work ethic and a calm, confident leadership style. You’re just as comfortable developing new products as you are fine-tuning a classic sourdough. You take pride in your work, lead by example, and bring positive energy to the team.
You’ll need:
* Certificate III in Baking (essential)
* Minimum 2 years’ experience in a Senior Baker or similar leadership role
* A strong understanding of bakery operations and fermentation techniques
* Great communication skills and the ability to manage a team effectively
* Experience in managing production schedules, food safety, and cost controls
* Additional leadership or management training is a plus
