The Parade Hotel Bunbury is seeking an experienced Executive Chef to take full control of our kitchen as we transition from externally managed operations to full in‐house leadership.

The Parade is a high‐volume waterfront venue, serving 300–500 meals per day during peak periods, alongside a strong functions and events offering.

This is a rare opportunity for a chef who wants real ownership of a kitchen — building their own team, implementing their own systems, and shaping the food direction of a busy and iconic venue.

The successful candidate will initially spend time hands‐on in the kitchen to understand service flow and the current team before establishing their own kitchen structure, menus and operational systems.

As the business grows, this role has a clear and rapid pathway to become Group Executive Chef overseeing multiple venues.

Key Responsibilities
* Lead and manage all back‐of‐house kitchen operations
* Work closely with FOH venue managers to deliver smooth, high‐quality service
* Design and develop a la carte menus, function menus and event food offerings
* Recruit, build and mentor your own kitchen team
* Manage food costs, ordering, stock control and supplier relationships
* Implement strong kitchen systems, service standards and procedures
* Maintain excellent food safety and hygiene standards
* Drive kitchen culture, consistency and operational performance
What We're Looking For
* 8+ years experience as a Head Chef, Executive Chef or Area Chef
* Experience running high‐volume kitchens (300+ meals per service)
* Proven ability to design and execute a la carte and function menus
* Strong leadership with the ability to build and develop kitchen teams
* Experience managing food cost, supplier relationships and kitchen profitability
* A chef who enjoys both hands‐on leadership and building strong kitchen systems
* Someone excited by the opportunity to help build a multi‐venue food operation

About the Venue

The Parade Hotel has been a Bunbury institution since 1897, located on the waterfront and deeply embedded in the local community.
