**Key Responsibilities**:
- **Meat Preparation**:
? Remove bones from various cuts of meat.
? Cut, mince, and grind meat to specified shapes and sizes for display or customer orders.
? Prepare crumbed cuts of meat to enhance product variety.
? Marinate meat cuts using a variety of marinades and seasonings.
? Cure special cuts of meat following company recipes and standards.
- **Smallgoods Production**:
? Select high-quality meat for smallgoods production.
? Prepare and process meat for smallgoods, ensuring consistency and quality.
? Safely operate grinding, mixing, mincing, and tenderising machines.
? Maintain and clean machines to ensure proper functionality and hygiene standards.
? Mix seasonings and pickles by combining spices, salt, and other ingredients.
? Ensure consistent flavour profiles and maintain product quality.
? Operate sausage filling machines to produce a variety of sausages.
? Utilize smoking chambers for smoked meats and sausages.
- **Quality Control and Presentation**:
? Regularly check products for consistency, freshness, and presentation.
? Ensure all products meet the company's high standards of quality.
? Adhere to all health and safety regulations.
? Maintain a clean and sanitary work environment.
- **Team Collaboration**:
? Work collaboratively with other team members to achieve production goals.
? Participate in training and development programs to enhance your skills and knowledge.
**Experience and Requirements**:
- **Qualifications**:
? Certificate III in Meat Processing (Retail Butcher).
? 2-3 years of experience as a butcher.
- **Skills**:
? Strong understanding of meat cuts, food safety guidelines, and butchery techniques.
? Excellent customer service skills, with the ability to assist and advise customers.
? Experience with operating and maintaining butchery equipment safely.
? Knowledge of smallgoods production processes and machine operation.
? Strong attention to detail and product quality.
