Featuring 90 modern units, a resort-style pool, ocean-view dining, a contemporary clubhouse, and sustainable features like solar power and EV charging, it offers an unparalleled coastal experience. Ahead of our grand reopening in mid-2026, we’re seeking a skilled and motivated Sous Chef to support our Head Chef and lead day-to-day kitchen operations. This is an exciting opportunity to be part of the opening team at a brand-new coastal resort. What will you be doing? Working closely with the Head Chef, you’ll play a key role in delivering outstanding dining experiences and maintaining high kitchen standards while supervising and mentoring a team of chefs and kitchen staff. Your day-to-day impact Prepare, cook, and present dishes to RAC standards. Supervise and support Chef de Parties, Commis Chefs, and kitchen attendants. Oversee kitchen sections, ensuring consistency and food quality. Assist with menu planning, stock control, and supplier management. Maintain compliance with food safety, hygiene, and WHS standards. Support rostering, training, and onboarding of new kitchen staff. Liaise with the Head Chef and F&B team to ensure smooth service delivery. Contribute ideas for seasonal menus and guest satisfaction improvements. What you’ll bring to the team Certificate III in Commercial Cookery (essential). Proven experience as a Sous Chef or senior role in a hotel, resort, or restaurant. Experience supervising and developing a kitchen team. Strong understanding of food safety, compliance, and kitchen operations. Excellent communication, organisation, and teamwork skills. Flexibility to work a 7-day rotating roster including weekends, public holidays, and reasonable overtime. National Police Clearance required.
