Role Overview As an Executive Chef, you will play a pivotal role in driving excellence across all aspects of kitchen operations. Your responsibilities will encompass: Designing creative menus while ensuring the highest standards of taste, presentation, and consistency. Managing budgets, monitoring departmental performance, and maintaining seamless day-to-day operations. Supervising, training, and developing the kitchen brigade to foster a cohesive, motivated, and high-performing team. Coordinating effectively with other departments to ensure smooth communication and enhance overall service delivery. Leading with passion and precision to elevate the dining experience, striving for exceptional guest satisfaction at every service. Your leadership will not only inspire your team but also cultivate future leaders, ensuring the continued success and reputation of the culinary department. Key Responsibilities Plan, develop, and create innovative menus for the hotel, considering factors such as product availability, service cost, marketing conditions, and expected guest numbers. Ensure the menus are aligned with the hotel's pricing strategy while maintaining appropriate food portions. Manage the costing of menus, effectively controlling food costs to maximize profitability without compromising quality. Prepare and post employee work schedules based on operating forecasts, ensuring efficient labor management within budgeted figures, including the management of annual and long-service leave. Maintain optimal food stock levels in the kitchen and pantry, ensuring the right quantity and quality are available in line with hotel occupancy and event forecasts. Oversee the receipt of food products into the kitchen, ensuring all deliveries meet required standards of quality and are stored and rotated correctly. Regularly inspect food preparation and cooking methods during all meal periods to ensure consistency, quality, and compliance with safety and hygiene standards. Assist in managing and controlling venue expenses, ensuring that costs such as wages, overtime, and supplies remain within the established budgetary guidelines. Ensure 100% compliance with all local legislation and health & safety standards, including hygiene and food safety protocols. Be responsible for the hygienic and safe preparation of food within all food and beverage outlets. Coordinate with the Engineering department for any kitchen maintenance requirements and ensure the kitchen operates with fully functional equipment. Lead regular shift and team meetings to address operational concerns, share updates, and keep the team aligned with departmental goals. Manage the day-to-day activities of the kitchen staff, ensuring productivity, morale, and high performance in line with hotel standards. About you Qualified Chef with a Certificate in Commercial Cookery. At least 5 years of experience, preferably in a high-volume kitchen environment. Strong attention to detail in food preparation and presentation. Relationship-building skills with team members. Passionate about delivering exceptional customer service. A genuine passion for the hospitality industry and culinary arts. Confidence to propose ideas and make sound decisions in high-pressure situations. Excellent verbal communication skills to coordinate effectively with kitchen staff and other departments. Be available to work over a 7-day rotating roster which will include working evenings, early starts, public holidays, and weekends.
