Job Overview
A leading role within our kitchen, we are seeking a talented and experienced Head Chef to join our team. Reporting directly to the Venue Manager, this position is responsible for menu design, food cost control, team training, and delivering exceptional meals across our bistro, functions, and bar offerings.
About the Position
* Oversight of all kitchen operations to maintain high culinary standards.
* Designing seasonal menus that meet customer expectations and align with the venue's goals.
* Supervising, training, mentoring, and rostering the kitchen brigade (chefs, cooks, and apprentices).
* Ensuring strict adherence to food safety, hygiene, and cleanliness standards.
* Managing inventory, ordering supplies, controlling portion sizes, and minimizing waste.
* Maintaining food costs within budget while delivering quality and consistency.
* Collaborating closely with front-of-house and management for seamless service.
* Fostering a positive, respectful, and professional kitchen culture.
Requirements
* Australian citizens and permanent residents are encouraged to apply.
* Certificate III in Commercial Cookery, Certificate IV in Kitchen Management, and Diploma of Hospitality Management.
* Minimum 2 years' experience as a Head Chef or Sous Chef in a busy pub, hotel, or restaurant environment.
* Proven ability to manage food costs, rostering, and compliance in a high-volume setting.
* Strong leadership, communication, and team-training skills.
* Creative menu development experience with a focus on modern Australian cuisine.
