Job Duties
As a Cook at Spice Route, your responsibilities will include:
* Prepare, cook, and present a range of authentic Indian dishes (curries, tandoori items, biryani, breads, entrées, desserts) to restaurant standards.
* Perform mise en place for both lunch and dinner service, including chopping, marinating, portioning, and sauce preparation.
* Prepare core Indian components such as gravies and base sauces (e.g., onion-tomato masala), spice mixes, and marinades consistent with the restaurant's recipes.
* Handle tandoor / grill cooking (where applicable), including skewers, kebabs, naan/roti preparation, and correct temperature control for safe and consistent cooking.
* Cook and finish dishes using Indian methods like tadka/tempering, slow simmering, bhuna, frying, and charcoal/grill techniques.
* Ensure correct use and storage of spices, herbs, and specialty ingredients (garam masala blends, whole spices, ghee, curry leaves, mustard seeds, etc.).
* Maintain consistency in taste, portion size, plating, and timing across lunch and dinner services.
* Monitor food quality throughout service—adjust seasoning, texture, and presentation to meet customer expectations.
* Follow food safety and hygiene standards (temperature checks, allergen awareness, cross-contamination prevention, cleaning schedules).
Requirements
To succeed in this role, you will have:
* 1–2 years of proven experience as a Cook in a restaurant or similar setting
* Certificate III in Commercial Cookery (or an equivalent / higher qualification)
* Strong knowledge of food safety standards and hygiene practices
* Ability to work effectively in a fast-paced kitchen environment
* Creativity and attention to detail to ensure high-quality and consistent dishes
* Strong teamwork and communication skills
* Flexibility to work rotating rosters, including evenings, weekends, and public holidays
