* Weighbridge and fruit receival, ensuring the quality of our grapes.
* Crusher/de-stemmer operation, maximizing juice extraction.
* Press operation, extracting valuable compounds from the grape skins.
* Wine & juice transfers, accurately monitoring liquid movement.
* Additions to tanks, enhancing fermentation processes.
* Juice inoculation, introducing beneficial microorganisms.
* Tank & equipment cleaning/sterilisation, maintaining a clean environment.
* Juice flotation, separating liquids by density.
* Red ferment pump overs, optimizing oxygenation.
* Barrel topping, stirring, filling and racking, refining the wine's characteristics.
Required Skills & Qualifications
* Conducting chemical analysis on grape, juice and wine samples, requiring attention to detail.
* Enzymatic testing for YAN, Malic acid, Glucose and Fructose, demanding precision.
* Conducting fining trials on juice/wine samples, necessitating thoroughness.
* Daily ferment rounds, recording temperature and Baume, showcasing organizational skills.
* Accurate and precise data input, highlighting technical aptitude.
