Located in beautiful Daylesford, just 90 minutes from Melbourne, Hotel Bellinzona is the region's premier bespoke hospitality destination featuring 63 rooms, 9 conference spaces, and 2 acres of stunning gardens.Supported by our newly appointed Head Chef, you will work with and lead a team focusing on menu development, execution, and delivering innovative conference, event, and wedding products.
We pride ourselves on creating unique menus utilizing some of the best local produce available.Responsibilities include but are not limited to:Manage day-to-day operations of the Conference KitchenCreate innovative, interesting menus for conferences, events, and weddingsLead the execution of these menusHands-on involvement with specialised events throughout the yearCollaborate with the Head Chef and Conference & Event ManagerAssist in The Virgin Kitchen when requiredMaintain effective time management and communication skillsHave sound knowledge of ingredients, cooking methods, and allergensManage rostering, ordering, and resource allocationOversee inventory and budget management, maintaining a good COSEnsure food safety and HACCP complianceDemonstrable leadership and experience at Chef level (or above) are essential.
