Job Title: Senior Culinary Manager


About the Role:

The ideal candidate will have a strong background in large multi-function high-end venues and experience producing consistent, high-quality culinary items. With a focus on planning and directing food preparation, this role requires supervising other kitchen staff and addressing operational issues.

Main Responsibilities:

* Ensure your area is properly organized, staffed, and directed to optimize kitchen performance.
* Oversee daily ordering of required food and equipment to satisfy production plans.
* Provide decisive leadership and on-the-job training to lower-level staff members, enhancing their skills and knowledge.
* Execute and supervise food production, packing, and tray-set activities, ensuring timely delivery and quality standards.
* Prepare complex meals or dishes to specifications provided, showcasing culinary expertise.
* Monitor and ensure Key Performance Indicator (KPI) compliance across the business, including recipe specifications.
* Control labour, food costs, and shrinkage to maintain efficient operations.
* Participate in the development of new food products and menus as needed for customer presentations.


Requirements:

Demonstrated Success: A proven track record in similar roles is essential.

Qualifications:

* Trade-qualified Chef with at least 3 years' experience in high-volume food production environments.
* Advanced knowledge of HACCP/QSAI/Food Safety and Occupational Health and Safety (OHS) protocols.
* Prior experience working in team environments with demonstrated leadership skills.
* Prior experience in HALAL working environments and knowledge of segregation and separation of equipment.
* Strong communication and organizational skills, with good financial understanding.
* Good knowledge of Microsoft Office and Windows-based computer applications.
