Waterline Restaurant is looking for a dynamic and experienced Head Chef to guide our kitchen through the Tasmanian seasons – from the quieter, creative pace of winter to the high-energy, high-volume demands of Hobart's bustling summer.

What We're Looking For:
A hands-on Head Chef who thrives in both calm and chaos
Exceptional attention to detail and pride in your craft
A passion for local Tasmanian produce and seasonal cooking
Strong cost control skills and experience managing kitchen budgets
A team leader who can train, inspire, and keep standards high
Previous experience with functions and events is a strong advantage
Minimum 5 years' experience in a senior kitchen leadership role
Must currently live in Australia and have full work rights – sponsorship is not available
The Role:
Full kitchen leadership – menu creation, team development, ordering, and costing
Deliver fresh, produce-led seasonal menus with a strong Tasmanian focus
Confidently scale operations to handle busy summer trade
Maintain consistency and quality in high-volume service
Support and execute a variety of events and functions alongside regular service
Collaborate closely with the management team to align food and service
Build and lead a team culture that values hard work, respect, and creativity
