A rare opportunity has opened for an experienced Beverage Manager to take ownership of the beverage program within a highly regarded premium venue.
We are currently recruiting on behalf of our client, who is seeking a confident and commercially minded beverage professional to lead their bar operation. This role suits someone who is just as comfortable designing a refined cocktail and wine program as they are managing margins, controlling stock, and running a disciplined service.
Our client is looking for a hands-on leader who understands that a great beverage program is built on creativity, consistency, and strong operational foundations.
The successful candidate will oversee the venue's full beverage offering—from menu development and supplier relationships through to team leadership, inventory management, and financial performance.
Key Responsibilities
* Oversee the daily operations of the beverage department, ensuring smooth and efficient service across all trading periods.
* Lead, train, and develop a team of bartenders and bar staff, building strong product knowledge and service standards.
* Develop and maintain a balanced beverage program including cocktails, wine, beer, and premium spirits.
* Create seasonal cocktail menus and beverage promotions that complement the venue's food offering and concept.
* Build and manage supplier relationships to ensure product quality and competitive pricing.
* Manage stock ordering and inventory systems, maintaining accurate levels while minimising waste.
* Monitor beverage costings, margins, and pricing strategies to support strong financial performance.
* Analyse sales trends and reporting to guide menu engineering and purchasing decisions.
* Ensure full compliance with licensing, RSA requirements, and all relevant health and safety standards.
* Maintain a well-presented, organised, and professional bar environment at all times.
* Work closely with the venue's leadership team to deliver a consistent and premium guest experience.
Ideal Candidate
* Proven experience in a Beverage Manager, Bar Manager, or Senior Bar Leadership role within a quality venue.
* Strong knowledge of cocktails, wine, spirits, and beverage trends, with an appreciation for classic technique.
* A confident leader who enjoys mentoring teams and lifting performance.
* Commercially minded with a clear understanding of beverage margins, cost control, and menu engineering.
* Highly organised with strong attention to detail and operational discipline.
* Passionate about hospitality and delivering high standards of guest service.
