Small (16 seater), degustation only restaurant in Fitzroy, looking for experienced Sommelier / FOH Manager to handle beverage program and service. For the passionate professional who is ready for their next step to create their own beverage pairing and juice pairing every month when the menu changes.
Gaea is a 16-seat degustation only restaurant on Gertrude Street in Fitzroy.
We're open for dinner 4 nights a week and lunch on Saturday.
The menu changes completely every four weeks, meaning the wine-match and non-alcoholic pairing will need to be constantly evolving and improving. The wine list will need to be small and boundary pushing.
You will manage the entire beverage program, the front of house, and general operations in the restaurant.
You will need to be self-motivated and self-directed.
The position is an excellent oppurtunity for a passionate Sommelier who wants lots of creative control over the beverage program and FOH operations. You will need extensive wine and beverage knowledge, food knowledge, and experience in a fine dining environment. With only 16 seats, you will be the face of the restaurant to many of our guests. You will work closely with the kitchen team to develop the non-alcholic and beverage matching for the 8 and 6 course degustation menus.
Experience in a hatted / michelin starred restaurant is required.
