POSITION Cluster Shawarma Specialist Butcher The client will provide a visa and relocation if not local LOCATION Egypt: Luxury Resort PURPOSE OF THE POSITION The Cluster Shawarma Specialist Butcher at the Luxury Resort is tasked with delivering exceptional shawarma preparation and production services for the central kitchen and beach club operations, supporting five luxury hotels. This role demands expertise in meat selection, butchery, marination, and consistent execution of high-quality shawarma across all outlets. Working under the guidance of the Senior Cluster Emirati-Oriental Chef Specialist, the position ensures culinary excellence in alignment with the Resort brand standards. QUALIFICATIONS / LICENSES / SKILLS Experience: Minimum 3-5 years of experience in shawarma preparation or butchery in a high-volume kitchen or central production setting. Knowledge: Expert understanding of meat cuts, marination techniques, and shawarma preparation. Familiarity with Middle Eastern and Emirati flavors and cooking methods. Skills: Exceptional knife handling and precision cutting skills. Ability to maintain consistency in large-scale production. Attributes: Strong organizational and time-management skills. A proactive, team-oriented approach to production and collaboration. High school diploma or equivalent (Preferred). Certification in butchery, culinary arts, or meat processing is a strong advantage. Fluent in English DUTIES Meat Selection and Preparation: Source, inspect, and prepare high-grade cuts of chicken, beef, and lamb tailored for shawarma production. Perform precise trimming, deboning, and portioning of meats for optimal use and minimal waste. Marination and Flavor Consistency: Create and apply authentic and standardized marinades for shawarma meats, following the Senior Chef’s recipes and guidelines. Ensure consistency in flavor and quality across all hotel outlets. Skewer Assembly and Production Oversight: Layer and assemble shawarma skewers in uniform sizes for even cooking. Manage batch preparation and coordinate deliveries to ensure supply meets the demands of the five hotels. Collaboration with Culinary Teams: Work closely with kitchen staff and chefs at all five hotels to align on flavor profiles and presentation. Provide expertise and training to kitchen staff on shawarma preparation techniques, as needed. Equipment Handling and Maintenance: Operate butchery tools and shawarma-specific equipment, including slicers, spits, and grinders, efficiently and safely. Perform regular maintenance and cleaning of tools and machinery to uphold hygiene and functionality. Quality Assurance and Food Safety: Monitor and ensure all meats are fresh, hygienic, and meet high-quality standards. Strictly adhere to local health and safety regulations and maintain HACCP compliance. Production Management: Oversee production schedules and inventory for shawarma meats to meet operational demands. Maintain accurate records of ingredient usage and waste management to optimize efficiency.
