About the Position
The Baker role at Born & Bread Bakehouse is essential for driving the heart of our operations, where you'll immerse yourself in the art of naturally fermented doughs and delicate pastries to produce the high‑quality, seasonal goods that define our brand. This hands‑on position spans the full baking cycle—from mixing and shaping to baking and finishing—ensuring our products not only meet but exceed expectations for flavour, texture, and presentation, all while adhering to food safety protocols in our compact, high‑output kitchen.

Key Responsibilities
* Prepare and mix doughs for bread, rolls, croissants, pastries, and other baked products using precise recipes and quality ingredients.
* Monitor and adjust baking conditions, including oven temperature, humidity, and timing, to ensure consistent quality and appearance of all baked goods.
* Shape, mould, and cut doughs into required forms, ensuring consistency in size and presentation.
* Operate, clean, and maintain bakery equipment such as ovens, mixers, moulders, and proofers in accordance with safety standards.
* Check the quality and freshness of ingredients before use and maintain accurate stock levels of raw materials.
* Prepare and apply fillings, toppings, and glazes for cakes, pastries, and specialty products.
* Oversee the cooling, de‑panning, and storage of finished products to maintain freshness and food safety standards.
* Collaborate with the bakery team to coordinate daily production schedules and contribute to continuous improvement in efficiency and product innovation.
Requirements
* Australian citizens and permanent residents are encouraged to apply.
* Certificate IV in Baking (or equivalent qualification).
* Minimum of 3 years' experience in artisan baking.
* Proficiency in dough fermentation techniques, oven management, and recipe scaling for consistent results.
* Keen eye for detail in quality control and presentation, with a strong understanding of food safety and hygiene practices.
* Physical stamina to handle early starts, repetitive tasks, and a fast‑paced kitchen environment.
* Excellent teamwork and communication skills, with a positive, adaptable attitude that supports collaborative problem‑solving.
