Experienced Fish Filleter – Red Coral Seafood (Bayswater, VIC)
Red Coral Seafood, a leading family-owned seafood wholesaler in Melbourne, We are seeking a skilled fish filleter Butcher or Smallgoods Maker to join our team. This role focuses on the preparation, processing, and presentation of premium fish and seafood products, including the production of specialised seafood-based smallgoods
Location: Bayswater, VIC
Start Time: 4:00 AM
Days: Monday to Saturday
Competitive hourly rate based on experience
About the Role:
· Selecting and inspecting fish and seafood to ensure freshness, quality, and compliance with food safety standards.
· Filleting, trimming, portioning, and preparing seafood products according to customer and wholesale requirements.
· Operating specialised processing equipment such as filleting machines, mincers, and slicers for seafood production.
· Preparing and producing seafood smallgoods such as smoked fish, cured seafood, seafood sausages, and marinated products.
· Monitoring seafood processing and smallgoods production to ensure consistency, quality, and hygiene.
· Designing and maintaining attractive displays of fresh and processed seafood products.
· Managing inventory, stock rotation, and ordering to ensure premium seafood availability while minimising wastage.
· Advising customers on seafood selection, storage, and preparation methods.
Training and mentoring junior staff in seafood butchery and smallgoods production
Skills and Experience Required:
· AQF Certificate IV, or AQF Certificate III with at least two years of on-the-job training; or at least three years of relevant experience in lieu of formal qualifications.
· Demonstrated expertise in seafood butchery and/or smallgoods making.
· Strong technical skills in seafood processing, curing, and preservation methods.
· Commitment to quality, precision, and artisan preparation rather than bulk production.
· Excellent knowledge of food safety, hygiene standards, and workplace health and safety.
Ability to work independently and collaboratively within a team
Proven experience as a fish filleter (speed & precision essential)
Knowledge of different species and filleting techniques
Physically fit and reliable with strong work ethic
Able to work early morning shifts and in cold conditions
