Head Baker / Baker – Bondi Beach
Bondi Boulangerie is a fast-growing, family-owned French bakery with locations across Sydney. We're known for our commitment to quality, daily fresh baking, and vibrant brand identity. As we expand, we're looking for an experienced Head Baker to lead production at our Bondi Beach flagship.
We bake everything fresh each day using traditional techniques and the best ingredients—no shortcuts. As Head Baker, you'll play a key role in maintaining consistency, training the team, and driving innovation in our bread and pastry offering.
What We're Looking For:
* Certificate IV in Baking and/or Pastry
* Minimum 5 years of professional baking experience, including team supervision
* Strong skills in all aspects of bread and viennoiserie production
* Confident with scheduling, team leadership, and maintaining workflow under pressure
* Committed to quality, detail, and maintaining high food safety standards
* A good communicator with a hands-on approach and positive attitude
Key Responsibilities:
* Oversee and lead all daily bread and pastry production
* Train, supervise, and support bakery staff to meet production goals
* Plan and execute weekly prep and ordering
* Maintain recipe consistency, product quality, and presentation standards
* Manage stock rotation, waste, and supplier deliveries
* Develop seasonal specials for events like Easter, Mother's Day, Christmas, etc.
* Ensure all food safety, cleaning, and record-keeping requirements are met
* Continuously improve production systems and team efficiency
