Role Overview:We are seeking an experienced and motivated Retail Manager to lead and grow our store operations. The ideal candidate will be responsible for overseeing product selection, inventory management, pricing, marketing, customer service, and staff supervision. This is a key leadership role that ensures Miki Beautiful Sushi continues to deliver outstanding quality, service, and profitability.
Responsibilities include but are not limited to:
* Determine the right mix of sushi offerings, fresh produce, and complementary items — monitor inventory and ensure product freshness and consistent availability.
* Manage ordering and purchasing, set pricing strategies, and implement marketing and promotional campaigns to attract and retain customers.
* Oversee the presentation and advertising of our sushi products, liaising with marketing channels and ensuring brand consistency.
* Engage with customers: sell products, provide advice on sushi varieties, ingredients, and safe handling or storage; ensure excellent in-store and takeaway customer service.
* Maintain accurate records of stock levels, sales, costs, and financial transactions to monitor performance and control waste.
* Prepare store budgets, forecast demand, and manage costs to ensure business sustainability and profit margins.
* Hire, train, supervise, and lead staff — maintain high standards of service, hygiene, preparation, and customer interaction.
* Ensure compliance with all food safety, health & hygiene, and occupational health and safety regulations applicable to a food retail environment.
Qualifications:• Tertiary qualification in Retail Management, Business Administration, or Hospitality Management (preferred but not required)
Other Skills and Requirements:
* Minimum 1 year experience in retail management, ideally within food service or Japanese cuisine.
* Strong knowledge of inventory control, food safety standards, and customer-focused service.
Excellent leadership, communication, and customer service skills.
* Ability to plan, organise, and manage budgets, stock, and staff rosters effectively.
* Strong understanding of marketing and sales strategies relevant to retail food.
* Commitment to quality, cleanliness, and compliance with health regulations.
* Flexibility to work shifts — including late evenings and weekends if needed.
